A built-in kitchen puts prep space, storage, and cooking in one place so you stay outside with your guests.

It is also worth planning now if you are building a new patio or cover. Gas lines, water, drains, and conduit are far easier to place before pavers or concrete go down than after.

The kitchen sits on a reinforced concrete pad or footing, thick enough to carry block, stone, and stone counters without cracking as the clay moves. When the island sits inside a paver patio, we pour a separate reinforced pad under its footprint and set the pavers around it, so the island never rides on sand.

The island frame is usually concrete block, grouted and reinforced at corners, with openings sized to the exact cutout dimensions of your appliances. Masonry is noncombustible, which is why it is preferred around grills, but we still follow each appliance maker's installation requirements; some built-in grills call for an insulated jacket. Stone, brick, or stucco veneer and the counters finish the structure.

Gas islands need ventilation. Propane is heavier than air and settles low, while natural gas rises, so vent panels are placed for your fuel to keep a leak from building up inside the cabinet. Counters overhang the face with a drip edge so rain falls clear of the doors, and the ground around the island slopes away so water never runs under it.

A kitchen involves more trades than any other masonry feature. This is the order we run them in.

Counters take the most abuse outdoors. Granite and other dense natural stones handle UV, heat, and grease well. Poured or precast concrete counters give a custom look and need a good sealer. Porcelain slabs resist staining and fading. We steer clients away from indoor-only surfaces that discolor in direct Texas sun.

Layout comes down to how you cook. A straight island works for grilling and prep. An L-shape adds a corner for a side burner or griddle and gives guests a place to stand clear of the heat. A raised bar at about 42 inches keeps guests facing the cook while hiding the work surface. Plan at least one stretch of landing space beside the grill for platters, and choose 304 stainless doors and drawers for Gulf Coast humidity.

Shade changes everything in a Houston summer. Most of our kitchens sit under one of our patio covers or a pergola installation, with a vent hood when the grill is under a solid roof.

The failures we see are predictable. Islands set directly on pavers with no pad settle and crack their counters. Wood or light steel frames with no protection rot or rust in our humidity. Gas islands have no vents at all. Sinks drain into a bucket or straight onto the lawn. Refrigerators sit in full afternoon sun, run nonstop, and fail early.

Another common one is a kitchen built before the patio drainage was solved, so every storm sends water under the island doors and into the cabinets. We fix these by correcting the base and the water path first, then rebuilding the finish.
